Ashley wants me to be like McMama

My Niece, Ashley, decided a while back that I should
blog what I prepare for dinner MckMama style.
SO...

Brown one pound of ground Italian sausage.
Layer desired amount of marinara sauce
onto Indian Naan Bread and sprinkle generously with
CHEESE...yum...

Add additional toppings according to your preference
(mushrooms, onions, peppers etc...)

Bake in a 400 degree oven until cheese is
lightly brown and bubbly. Enjoy!

There you go Ashley. A quick, easy, dinner idea
from Aunt J...MckMama style...

TOTALLY makin' it... - Recipe of the Week -

-Got a double fix today...new recipe and new
beautiful food shot. Click on the image above or
here to visit Smitten Kitchen.

Green Bean and Cherry Tomato Salad
Adapted from Chez Panisse Vegetables

Serves 6

1 pound green beans (though if you can find
a mix of green and yellow beans, it will be all the prettier)
1 pound cherry tomatoes
1 large shallot
2 tablespoons red wine vinegar
Salt and pepper
1/3 cup extra-virgin olive oil
Basil or other herb (optional)

Prepare the vegetables: Top and tail the beans and cut them
into large segments. Parboil the beans in salted water until
just tender, about four to five minutes. Drain and
immediately spread them out to cool. Stem the cherry
tomatoes and cut them in half.

Make the vinaigrette: Peel and mince the shallot and put
it in a bowl with the vinegar and salt and pepper. Whisk in the
olive oil. Taste and adjust the balance with more vinegar, oil,
or salt, as needed. Toss the cherry tomatoes in with the vinaigrette;
this can sit for a while. Do not add the green beans until just
before serving or they will discolor from the acid in the
vinaigrette. For variety, the salad can be garnished with basil
or some other fresh herb such as parsley, chervil or hyssop.

Do ahead: Beans and vegetables can be prepared
ahead of time. Simply toss with the dressing only
at the last minute, as it can discolor the green beans
after several hours.

Lunch...

Whole Foods is Ruining Me...uhm, too...
Funny that quinoa salad is what I eat for lunch
and then I read this blog post
of a fellow Whole Foods addict.
Check here...

SO...what is quinoa (KEEN-WAH)? Besides just YUMMY!

Quinoa is 100% whole grain and is close to being a perfect
food source in the balance of nutrition it provides. Technically it's
not a grain but the seed of a leafy plant related to spinach.
Quinoa is an excellent source of protein - 12% to 18%.
according to The National Academy of Sciences, quinoa
is "one of the best sources of protein in the vegetable kingdom".
Quinoa contains the amino acid lysine which helps the body
produce protein. It also helps the body process the protein in the
quinoa and in other foods. The World Health Organization has
rated the quality of protein in quinoa to be equivalent
or superior to that found in milk products.

The Food Porn People are SO NICE!

AND apparently they speak English...
AND GOSH, they even told me of their website
that's in, get this, ENGLISH!
Do you believe it?
Now, I can read how to make the food
I've been visually stalking.
Food lust...dangerous stuff! CHECK IT OUT HERE!

The NY Times Article that I read and referred to
in my initial "Essentially Food Porn" post
can be viewed here.

Thanks Leonor for your kind comment and
for doing stuff in English and for
the cite for The Times!

(folks if she cooks it and photographs it,
I'm gonna be soooo jealous!)

Essentially Food Porn

New Food Blog I'm following...
I can't understand a SINGLE WORD
of what is written. I go there for the pictures.
It's essentially food porn. It's true.
I read a review of this foodie blog somewhere
and that's what they called it. I agree.
It doesn't help my cause to look at
pictures like this. Dang...I want chocolate.
Check it out here.

Summer Salad

Okay...I only grew the basil.
This is a traditional Italian Salad.
It's easy and simple and healthy and yummy.

1 Tomato
Fresh Mozzarella (You can slice buffalo style or buy medallions)
4-8 Basil Leaves
Sea Salt
Freshly Ground Black Pepper
Olive Oil
Balsamic Vinegar (Optional)

Slice tomato and cheese, layer with Basil leaves,
drizzle with Olive Oil (or Vinagrette) and Balsamic Vinegar.
Salt and Pepper, Eat!

It's great with Bruschetta or fresh Italian Bread
and Pasta or just as lunch.

UPDATE...OH, Yummie, Yummie, Yum-Yum!

TOTALLY made Audrey's Guacamole for dinner with Taco Salad.
OHMIGOSH...it's good!
I had to tweak a smidge as I didn't have
everything called for in the recipe.
SO...I added onion, serrano peppers (no seeds),
fresh cilantro from our garden, 1/2 clove of fresh red garlic,
and THE SPECIAL SECRET INGREDIENTS.
OH...and we used the myzithra cheese instead
of ANOTHER SECRET CHEESE.
I would've used cotija like Audrey had suggested
when we talked recipes at the picnic but it was a
special-order cheese. The myzithra was great!
Happy, HAPPY tummies!

UPDATE...SO I did have Audrey's Guacamole Recipe
posted in a smilebox then she informed me that it
was her sUpASECRET recipe. So, if you didn't get
it last night while it was up for a few hours you
TOTALLY missed out BUT take heart!
You may be able to buy it at a Farmer's Market
near you someday!
I'll never tell the ingredients (Well, at least not again).
I'm, now, sworn to secrecy...it's a blood pact!
